I live in Seattle. Been here 40+ years. I would not plan a vacation in Washington State with Seattle as my starting point at any time of the year (take heed of the warnings of previous posters). But especially not in the late spring. I would instead fly into Spokane, rent a car and head south to the Palouse region of the state and get a motel room in Pullman. May is a long month, but if you are there near the end of May the wheat fields of the Palouse will be multi-shades of brilliant greens with abundant wildflowers. Mount St Helens - an all day trip - is an awesome experience to see the unbelievable affects of the explosion. Nature becomes very real. Fog and rain weather would not be a good weather forecast for the trip.
Living in the Seattle area for 18-years I will share that part of our country is gorgeous three months out of the year: June July and August. Take a ferry ride, go to Victoria for several days staying at a B&B, Snoqualmie Falls along I90 will be worth the drive. A city is a city is a city.
Note: Seattle has a huge homeless population some of whom camp our at the park next to Pike's Place Market, and many of them are abusing drugs.
You would probably need two weeks to adequately cover everything on your list. I recommend staying in the Seattle area for the entire week with a trip to Deception Pass. Also they have a fantastic zoo.
