"Tasty Potatoe - Soup"

Leeks are high in price and keep going up! I thought, buy them now and make a wonder, "Vichyssoise" a French potato soup made with Leeks & potatoes.

Leeks, from the onion family, are much tastier than plain yellow onions. I removed the greens to the near white part and cut them length wise washing out all the dirt. In photo 2, I cut the leeks once again length wise turned them horizontal and cut the rough ends off, then chopped them into 1/4" pieces.

Using my 6qt Fissler Pressure Cooker, I placed the Leeks into the pot with a tbl. of coconut oil and seasoned with: 3 smashed cloves garlic, a sprinkle of crushed black pepper, Oregano, Sea Salt, 2 Bay Leaves.

Also added, 3 pealed baked potatoes roughly chopped added to pot with 2 cans of sodium-free Chicken stock mix all well. Bring liquid to a boil cover pot to pressure high and cook 20 minutes.

After time is reached, released pressure in pot and uncover. Let rest to bubbling stops and mix by hand with my Waring hand Mixer-Blender, 2 speeds!

This is very tasty potatoe soup, I did another can of sodium free chicken stock while hand blending! This particular recipe, can be very versatile in the making. You can add cubed ham, maple-bacon, chicken chunks, smal pasta shells, HOW'S THAT! Don't forget your favorite spice and season! CIAO, AP

Wonderful dish for a cold winter evening, AP. Looks delicious so I can only imagine how good it must taste. Your home made comfort food always brings back fond memories of Mom or Grandma in the kitchen creating mouth watering meals for dinner. It’s nice to see you continue that proud family tradition.

AP, sounds wonderful and my wife LOVE'S potato Soup.
I'm going to try your recipe, however, I do not own a pressure cooker.
Can the soup be made with out one?
