Nikon and Fuji -- sounds about right.

I read someowhere that the Canon EOS 5D was assembled in Japan, and also
that Canon is planning to shift production for some other models from China
to Japan sometime this year,

What about Sony, Panasonic, Pentax or Olympus?

These type of information (where the camera is made) is hard to find with Google.

Really?

Last year during an interview a Nikon exec, maybe the CEO, told the reporter where their cameras are made. Even mentioned the percentage of parts that were purchased from vendors.

5DIV and EOS R. Not that it makes any difference. Canon (or Nikon or hundreds of other international companies) doesn't just go to some company in China or Indonesia or where ever and say "Here, build us this camera." They oversee every aspect of the production of their products. They build the factories. They train the workers. They bring in the specific machinery needed. Their quality control standards are adhered to. Caterpillar, Cummins, and John Deere, to name just a few, build vast amounts of equipment and engines all over the world and I can tell you from long experience that the quality is every bit as good as anything built here in the US.
It's all about the integrity of the company whose name is on the product, not where it is built.

Really your link gives me no clue at all.
Tell me where do they made the Canon 6D? The 80D? the 5D Mk IV?
Where do they make the new 24-70mm f/2.8 Nikkor S in Z mount? This is the one thing I wanted to find out since the lens was announced. Even B&H sales staff can't answer my question for sure either. I don't blame B&H though.

Yes, if four weeks ago is
considered "recently".

I don't buy into associating country of origin with quality of workmanship or anything else. The rules for claiming this distinction are purposely loose and riddled with loupe holes.

A reputable company would not jeopardize their brand and have multiple levels of design, quality assurance and control. One standard regardless where it actually is made.
