Steve McCurry is wonderful and I believe he has an online class. Annie leibowitz does a lot of portrait work. McCurray covers a lot more ground

A good source is Creative Live, by Adobe, I think. But do not buy listed price. They are always having sales and the courses you will want will be about half price shortly. Watch their ads buy joining the site and they will be sending you ads and free videos almost daily. In the meantime try Adorama University or some other name Adorama uses.

I am an intermediate level photographer and I have learned so much from inexpensive courses on Udemy and Photo Whoa. Sometimes it's just one little thing that you pick up that makes all the difference. Get him a course on long exposures and surprise him with a 10 stop neutral density filter! Anyway, $9 is not a lot to pay for a course and so far most of them have been well done. And they come with a money back guarantee in case you aren't happy. Hope this helps.
Lisa Langell from Arizona does photo shoots/classes all over the US with small groups. For example she holds a hummingbird shoot two times a year in Southern Arizona, while also doing a bear adventure shoot/class in Alaska. Not knowing your budget or location I thought I would mention this in case this would be of interest. These are geared more toward wildlife and outdoor photography, as learning and hands on adventures.
Depends on how much you're interested in paying. Kelbyone is a photographic educational site that has hundreds of tutorials on dozens of topics. An annual subscription also includes digital Photoshop magazine & Lightroom magazine. All very well done.
I think annual subscription is in the $200 range. Check out Kelbyone.com if that's in your price range.
The Joel S from NG is ok but long and little slow. There Are photographers that teach and mentor people where do you live?

You might want to check out a community college course, or many of the free online courses that are available. The advantage is the contact with other budding photographers and shared learning experiences.

A lot of people are suggesting workshops. If that is something you would be interested in, why not do a search for ones in your area? I can do that for my area, and get some interesting results. If the price is reasonable, and the workshops are held reasonably close, you will save on travel!
If you see the work of a photographer you like, look for a website. There you will find out if they do workshops, tutorials, etc.

I'd do a little research and find a local camera club with a good reputation - if he doesn't already belong to one. Gift him a year's membership. He is likely to appreciate that more than an online course.
If you can afford it, give him a week long workshop. Main Media College is excellent and I have been there for two summers. John Gerlach's workshops are outstanding. He does not take pictures during the field trips. He reserves his time for individual attention.
As a former Art/Photography teacher, Check with your local community collage as they have different skill level courses through out the year/semester. The best courses are those that give you hands on cirques in a class room setting or field trips.
