BBQ / Fried Chicken (or some really good oysters or whatever)
Anything Worth Seeing-- particularly funky old beat-up neighborhoods

I've never been to Memphis, but I've heard that Beale Street is pretty cool.

I was there in December. Beale Street is definitely funky for unusual photo. BBQ joints, and music. Rock and Soul Museum was worthwhile with possible photo ops of the exhibits. Trolly ride around town is cheap. Flights Restaurant was very cool, check it out. Bass pyramid is unusual. Peabody Hotel is a must see, especially when we were there with Christmas decorations. Got enough?
Craig, you will find Beale Street worth your visit as well as Graceland. You might consider a riverboat tour as well. Memphis Riverboats offers these excursions.

The Peabody hotel for the duck walk in the morning and Rendezvous for the best ribs in the USA. We have good ribs in Nashville and other cities but none like Rendezvous. Corky’s BBQ is pretty good but their ribs can’t be compared to Rendexvous especially if you like dry rub. You will need reservations. Beale street is okay but nothing compared to downtown Nashville or Austin TX. Be careful in that area.
Is that Phillips Studio still there?
I don’t know. I forgot to add the Memphis Bell also makes for good pictures.
I lived in Memphis for several years and still go back occasionally to visit friends. There are some great places to photograph and things to do. Just be very careful. Memphis is a high crime city. You can be driving through an affluent historical area and the next street over is a low income area.
Downtown is a great place for photo ops and good for walking around. Lots of old buildings still in use and a trolley system. I would recommend the full ride on the trolley for some photo ops. Here are some places downtown that might interest you.
Mississippi river paddle boat dinner cruise - The food is not great but the views of the sunset on the river, the bridge and the city skyline at night are great!
Sun Studios - Good opportunity to capture B&W shots of the studio where Elvis and so many others have recorded. They haven't changed the studio and it still has the old mics and soundboards. The area around the studio is very urban and gritty.
Beale St. - They block off the street at night for pedestrian traffic. You can wander up and down the street and purchase adult beverages from the bars from the sidewalk. Street musicians and other very eclectic folks. Beginning April 17, every Wednesday is Bike Night. Lots of tourists but lots of locals hang out there as well. The Pig has awesome BBQ. There is also the Orpheum and other historical buildings.
Memphis has also really grown as a food city. Lots of good restaurants down town. The Rendezvous is famous for its ribs. Gus's World Famous Fried Chicken is the best!
Cooper-Young district has some great restaurants and a very eclectic mix of shops and bars. An artistic neighborhood.
