Could I ask how you transfer them to your home computer when back home? It's my understanding that you cannot download to an external hard drive from the iPad Pro

If you have Apple it shows up on every device.

Excuse me? I connect regularly to multiple USB-C external Hard Disks.

But not with a machine running iOS. That, at least at present, doesn’t support discs.

I use my iPadPro a lot. The iPadPro is smaller and lighter than the MBP and I love the format. In fact I am typing this reply on my iPadPro with Apple’s thin keyboard. It’s great. But it is not a MBP and I cannot do 1/2 the things on my iPadPro that I can do on the Mac. The problem is not the hardware. The hardware is great. The problem is the software. IOS is a far far cry from MacOS. And one of the many things missing from iOS is external disk support:
“The iPad does not support generic external storage. You cannot plug in a USB-C flash drive and see the files in the Files app. This is an operating system limitation that many expect Apple will address in a future software update, but it is not possible today.”

I have tried using my iPadPro in lieu of my computer on travel. It is possible to do some things, but it is more difficult than using the computer, and there are some things I simply cannot do. Printing for example, is not built it to the iOS. You have to buy an app. to print. Up until very recently there was no file system on the iPad. Now there is a file system but it is clunky not seamless like the Finder found on MacOs. And there are other limitations.

I say again, it is not the hardware, that will be the limit. The iPadPro hardware is great. It is the differences in software that you will notice the most. So let me put it another way, you may want to give some thought as to the feasibility of giving up MacOS for iOS. That is what you are really doing when you use the iPadPro.
I recommend you go to the store and spend some time there working on an iPad to make sure you can accomplish what you want to do with iOS.
