These are rather coarse controls, but they work quite well if you test them ahead and know when to use them. Of course, exposure and white balance are critical for in-camera JPEG capture, too.

The latitude of raw files is much more forgiving, just as color negative latitude is more forgiving than slide film latitude.

All of this is to say that with proper planning, discipline, testing and experience, we can make great JPEGs with no post-processing. Many professionals do it all the time, just as we did when transparency (slide) films were the necessary choice. We know when we cannot, however, and use raw workflow (or parallel raw + JPEG workflow) then.

I'm in a similar position of being very busy, only semi-retired, taking care of grandchildren, big family with a lot of family events, other hobbies, etc. Much of what I shoot doesn't allow time to properly set up the shot (grandchildren move pretty fast, as do race cars and waves), or we are moving and I can't hold up the group. I shoot with a Canon 80D and mostly shoot in Program mode. The primary creative controls I use are ISO and focus zone (single point or one of the 3 other successively broader zones). I also use aperture or shutter priority modes when appropriate. I can easily get the DOF I want and focus (no pun intended) on the composition. I started shooting RAW+JPEG several months ago and post-processing in Lightroom. I have 4 lenses (so far!) and 3 are zooms (EF-S 10-18, EF-S 18-135, EF 70-300 [112-480 equivalent on my camera] and an EF 50). I use the zooms almost exclusively due to the control they give me with composition and sometimes DOF. This gives me what I need to make decent photos that I'm pleased with. BTW, I was happy with SOOC JPEGs until I recently started shooting RAW and post-processing. I'm seriously considering only shooting RAW now, except when I go to the races due to the sheer number of photos I shoot there (~11,000 in two days at Laguna Seca last August).
