Considering a mirrorless camera to keep in my vehicle, any recommendations?

You could go for a bridge camera or a decent P&S.
But if you want something that will fit into your Canon universe look at the M50. Right now with a 15-45 mm (it is an APS-C so eq of 24-72) lenses it is $600. It is small, as in tiny, and will fit in a large pocket with an EOS-M lens on it.(and can use your EF lenses with an adapter - it will look funny, the M50 is tiny) You can also find belt pouches that will hold it.
I was talking to the Canon Rep when he was at my local camera store Sunday and he says the M50 and two lenses are what he carries to travel, in a small pouch with a belt loop. It covers wide angle to 200 mm with the two lenses he carries.
I held an M50 with that lens on it and it would fit in three of the pockets of the photographer's vest I was wearing at the time.

Try looking at the Olympus TG-5. It is waterproof and can withstand some abuse. 25-100 zoom in 35mm terms.

I took this (SOOC) in a totally dark room using my Samsung S7 which is three generations behind the latest.

Now do it with something moving, like a person walking...or with the camera zoomed in.

I’m picturing that in my mind with my 70-200 f/2.8 L mounted on it. Thanks for that, got me to thinking a bit.

They make a 55-200 for it that is less than 3 1/2" and about 9 oz and f/4.5-f/6.3. cost $349.99 My photo vest has one pocket that could hold the camera with the 15-45 and the 55-200.
And the larger L lenses with a tripod foot you just mount on the tripod or put on a pistol grip to do hand held work.

I think that maybe a good bridge camera is better suited for what you want to do with it.

BINGO !

Yes the a6000 is a great bargain and very versatile,
and a few other compacts will also be portable and
versatile and recommended around here. Cuz 'here'
is Geek City. I myself love [and use] various "Little
Giant" cameras. But for the use you describe, only
the Olympus Tough, or similar ruffians from Fuji or
Nikon, really make any sense.

My own "ruffian" was a Nikonos. Very limited tech
much like the Olympus Tough, but it could be with
me where my "good gear" dare not tread.

I was thinking the same. Inside vehicle does not make good long-term storage for cameras or lenses. Extremes in temperature, as well as humidity fluctuations will put a great deal of stress on delicate mechanical components, and possibly on some of the electronic components also.
