Trying to get shots of some fall oak leaves. Not a lot of color as they go from green to yellow to brown, sometimes skipping the yellow or brown before falling. Here are two images the first is my original in jpeg and the second is the processed version from raw.

First, I much prefer your tighter crop on the most dense regions of foliage.
My only suggestion is to repeat with a much larger aperture to throw the highly distracting background elements out-of-focus.

Agree with Dave, f/11 is too much depth of field + you're shooting into harsh light which is fighting for attention. I like the wide view if you can re-do with bluer sky or perhaps earlier in the morning.
I saw your Photo Gallery images; that tree has a wonderful shape! You might try experimenting with longer focal lengths. Sometimes filling the frame to the point of extending past all edges can be very effective with autumn colors.
One more thought: when shooting towards bright white sky, experiment with under-exposing by a stop or two and then lighten the subject details selectively in your editor. Some cameras like to do that
Tighter crop is right on for what you wanted I think, and most pleasing to me--except for the oversaturated blue/cyan in the mountains and middle distance.
