A lot of my cooking ideas I get from YOU-TUBE, this is one of them! Photo 2, shows peppers cut faces. They are quite simple to do just take your time cutting with your sharp paring knife. After cuting the faces I washed the peppers and steamed them upside down for two minutes covered, NO LONGER, they will be cooked again after they are stuffed!
Photo 3 shows part of the stuffing. A med onion cut in half and coarsely chopped. Small button mushrooms cut in half with stems. Added one link smoked Kielbasa diagonally chopped cooked in coconut oil 5-6 minutes. Photo 4 shows Basmati rise with 1 stock celery fine chopped, 1 med carrot chopped into cubes and cooked with rice in my small 3 qt pressure cooker, 3/4 cup of rice with 1 & 1/4 cup chicken stock 7 minutes.
Fava beans were added to photo 3, not shown. Rice was seasoned coarse black cracked, good a sprinkly of oregano, a sprinkle of Turermac, Cumin, Curry, a sprinkle of coarse garlic. Photo 3 and 4 were mixed together well.
Peppers were stuffed just under the top and was topped with Mozzarella cheese with pre cooked Ramen Noodles placed on top of pepper hanging over for attraction! Placed in my preheated 375ยบ toaster oven 40 minutes. This is my first try and I feel rewarded! CIAO, AP

Neat idea with the peppers. I wonder how it would work with the traditional pepper stuffing.
