My canon 5d has a 3 shot burst and I can bracket the shot. I was wondering if those of you who have later models with 5 or 7 burst modes can set the exposure for each of them? Mostly for enhanced hdr and the like.
It would collect the images just like a three shot burst except it's using 5 or 7 shots. For a 7 shot bracket, 3 would be under exposed, 3 would be over exposed and 1 would be exposed "properly". Did that answer your question?
Like your 3 shot exposure, the 5 and 7 would be evenly separated. You don't have the option of having, for the 5 shot bracket, something like -3, -1, 0, +2, +3.

Yes, I can choose the amount of bracketing to up to 7 ( +/- 10 stops) on my 5D!
For example, I could set -1 -2 -3 0 +1 etc?

One of your earlier respondents pointed out that the numbers have to be "evenly spaced" - meaning each has to be a full stop or the same partial stop between one number and the next. -3, -2, -1, 0, +1, +2, +3 is an example of seven exposures at full stop increments. This might be a situation where watching a "how to" video would be easiest.

Below is the info on bracketing from my 7D Mark II manual (AFAIK, most other current Canon models offer similar)...
As you can see, it defaults to 3 shot bracketing, but that can be changed to 2, 5, or 7 shots.
The sequence also can be changed... -, 0, + or several other choices.
The increment remains consistent across whatever number of shots will be taken. I have my cameras set up to work in 1/3 stop increments, so for bracketing I can choose 1/3, 2/3, 1, 1-1/3, 1-2/3, etc stops, and which ever chosen will be used as the increment for each subsequent shot in the bracketed sequence. (It's also possible to bracket white balance rendition, as shown on this page from the manual... but that's a separate issue.)
It's also possible to set the camera to retain the settings or to cancel them when it's turned off.
