OK- Here's the facts- no nonsense!
"Prise de vue"- means photo SHOOT in French. It's a perfectly acceptable term in both languages (English and French). "Shot, shoot. shooting with a camera" in all its permutations will not be misconstrued as shooting with a firearm by most logical folks! I am sure the OP has no intention of bringing firearms along on his trip to Canada- but just for the record, the authorities do take a dim view of that up here. The gun laws in Canada ARE very strict and prohibitive.
Poutine is delicious! It is the ultimate fast food. Of course, if you ate it for 3 meals per day for a month, you would probably die of a heart attack but as an occasional treat it is perfectly fine. You are gonna be taking lots of pictures and walking around quite a bit. Parts of Quebec City have steep hills- you're gonna need the carbs!
When in Montreal, you gotta try Schwartz's smoked meat. The restaurant is on St. Lawrence Street, which is the "DMZ" between the East and West ends of the city. After you eat that sandwich you will never enjoy American corned beef or pastrami again! The place looks kinda unimpressive and there is always a bit of a line up- sometimes the waiters are grumpy. I understand that Celine Dion recently purchased the business!
The reason I am recommending fast food is that if you are serious about your photography, you might not have enough time to eat. There are incredible photo-ops everywhere! People, urban scenes, architecture, street performers, festivals, historic buildings and places, landscapes and entertainment! The Autumn colors are gorgeous - bring a polarizing filter and its "Kodachrome" time!

Right now,I am working on a job for the tourism association of Quebec. I can't post any of the scenes as yet- I have to wait for after the publication date of the guides that I am illustrating.

E.L Shapiro gave you an excellent response. There are no issues with taking (shooting) photos. October is a great month to visit. The crowds are gone and the fall colors are at their best. The old part of Quebec City is beautiful. Lace up your walking shoes and start walking (with camera in hand). I wish you a great trip!
