Does not look like a huge leap up IMHO.
The megapixels are 24 on the 7100 however one of the complaints about the 7100 was it has a very small buffer which was corrected in the 7200.
Only you can decide if the small improvements are worth your money.
I personally would hang onto the 7000 and save for the 7200, but then that is me.
Are you not happy with the 7000? Your 7000 has 16MP.
I personally use the Nikon D300 and get fantastic shots. Unless you make wall size prints, the D300's 12MP is fine.
Have made 16x20 prints with superb results.
Lateral move the d7500 would be the better choice, second choice D7200 but there is not much different than what you have
save the $300, the D7200 would be more of an upgrade

If you can sell the D7000 for $300, then do it. Otherwise save your $$ for a real upgrade.
I shoot a 7100 now and if I came across this deal I would buy in a second.

I upgraded a few years ago from the D7000 to the D7100. My wife still shoots it. The difference between the 7100 and 7200 is not noteworthy to the average shooter in my opinion.
Good price and a good camera but you list your desired cameras and it is not on the list. If you buy it this will set you back a long time in getting to the 7200 or 7500 range where you want to be. Little price - little gain! My personal view is when you upgrade, make as much gain as you can or you will forever be behind the curve!
Save until you can afford the D7200.
I would look at the D7500
D7200 would be a much better choice if they have older manual focus lenses (I do and I'd never get a D7500 as the D7500 won't meter with older manual focus lenses). That said I have a D7100 and it's almost a daily shooter still for my macro shots. I use it for Tele shots as well. Everything else is done with an FX body.

The D7100 did everything I "needed" to do. Thousands of shots from Yellowstone to BIF and landscapes. The biggest improvement in newer purchases was the improved focus system capabilities, which I definitely take advantage of with the sports and BIF shooting I often pursue. My wife relieved me of it due to my subsequent acquisitions and it satisfies her every need on a frequent basis.
