I use Easy Release. Comes with default releases but also allows you to use custom wording. They can sign the release on screen. You can also email the client and yourself a copy.

Check the Apple App Store; lots of choices. Some can be signed on the iPad screen using a stylus.

Strange, I have never used nor had reason to use a release
