I am just wondering what people are using to process their photos. For myself I use Lightroom 2 (mostly because I was told to pick something and stick with it) and then Photoshop CS3. Please let me know what you use!...Julian

Also a Lightroom fan. But every individual has their own preferences, and deservedly so.

Julian, I use lightroom and PhotoShop
Lightroom and Luminar for Windows. Oddly in spite of many complaints from others, it performs flawlessly for me. Topaz was great but so resource heavy it crashed my system regularly
I use Faststone Image Viewer for my viewer and organizer. I pre-process raw (NEF) with Corel Aftershot Pro 3 and convert to tif files. I use Corel Paintshop Pro X9 and 2018 Ultimate with Topaz, NIK, Redfield, and other plugins for final processing. -

I use Lightroom Classic for processing. I also use Photoshop occasionally for something special, such as removing an unwanted object, etc.
Lightroom 6 stand-alone. It might be my imagination but I get the impression that it's slowing down more and more to the point of being a bit clunky sometimes. I'm left wondering if that's a deliberate tactic by Adobe to provide an incentive to change over to the monthly subscription version. I haven't any intention of doing that, so I may change over to On1 or something similar.
I also have Elements 12 which can do a lot but I don't like the drop to 8 bit processing that happens when you want to do the interesting stuff. It doesn't affect things noticeably every time, but there are definitely times when there is a noticeable drop in quality.
Photoshop CC2018 and Bridge

Lightroom Classic/Photoshop CC, On1 Raw 2018.5, DXO PhotoLab, Capture One Pro 11, Helicon Focus, Photomatix Pro, PanoTools, and a few other plugins that I use infrequently.
I use Photoshop Elements 11 and sometimes Serif Photoplus X7
Capture One 10. Will eventually upgrade to 11. Excellent processing. Creating files and retrieving them is not intuitive, however. Made me crazy for a few weeks. I think I've got it now but am not certain. There are many complaints about creating libraries in Lightroom as well. May there someday be an easy intuitive library creating system as easy as the late lamented Aperture 3 that alas did not have anywhere near the capability for processing that Capture One does.

whatever ships with the various
cameras, plus PS Elements 3.0

I use Aftershot Pro 3 with Paintshop Pro Ultimate 2018 and Affinity Photo. My go to is Affinity Photo.
