Just came from there on vacation. Been there many times. Gatlinburg is awesome for things to do. Lots of shops and restaraunts. The park is magnificient. Cades cove is a must for photography. There are several things on the cherokee side as well. Mingus mill and several waterfalls along the way. The roaring fork motor trailis also very nice and is right off the main drag in gatlinburg. Several pioneer cabins that you can stop and see and photograph as well as water falls.
Ditto what tgshoe syas. We are going the end of Oct as well from MI and taking 75 south. Debating on whether to go thru Cinci or take the 275 bypass. A little longer but will avoid driving thru downtown
Cinci. Tons of shops in GB as well as good eats. Some can be expensive but it's vacation, RIGHT? A lot of pull offs in the NP for picture taking. Take the trip thru the Elkmont village. Cades Cove is a must for first timers as well as returnees. If you are lucky you may get to see bears. Roaring Fork, Clingman's Dome, Greenbriar, Arts & Craft area are all great places. Cades Cove can be an all day thing. Plan on at least 3 - 4 hrs min. Go to Townsend and the Tuckaleechee Caverns. Pigeon Forge, the Island is great. Old Mill for great food. All in all you can spend as much or as little as you want. Our biggest expense is usually food. We plan $40 per meal, $100 a day, ball park for two. We've rented a cabin in Chalet Village in GB. This is our 5th trip and we still haven't done everything. Go, enjoy...it will be worth it.
Neglected to mention the wife and i are going back october for long weekend. See the leaves in fall. Driving from DFW. Worth it.
Cades Cove and Roaring Fork Motor Nature Trail In Gatlinburg have some excellent viewing for Picture taking.
Try Cade’s Cove, the tramway Up the mountain, Kingmans Dome and the covered bridge. Only locals wii give you to this site.

Check out the West Virginia Website or Google Bridge Day, great opportunities for fall pictures. You can take I-75 to 23 south to 275 bypass at Columbus and take I-70East to I-77 south follow that and catch I-64 east to I-79 north to catch Bridge Day. When you are done there you can back track and get to I-64 and decide which way to go to Gatlinburg from there. Don't miss a chance to travel the Blueridge Parkway for some great photo opps. The fall colors are great if you plan your trip well.
I think most people missed your "opportunities ALONG THE WAY" part. If you're willing to go a little farther east, take 23 instead of 68. In Ohio, just south of Columbus and east of Chillicothe is Hocking Hills St. Pk. Great photo ops there. Head down into WV and east towards Beckly to Babcock St. Pk. and find great photo ops of the old mill there. Then, if you're staying on the back roads, head to Gatlinburg and just watch for old barns, many with quilt blocks on them.

Most also seem to have missed the fact that highway 68, wherever it is, does
not go South.

Is the "Hocking Valley Scenic Railway" still running?
For things to see/photograph avoid most Interstate highways. Get a book on road trips for the areas you will go through.
