Is possible to take a ride up and over the Seiras like a rider on the Central Pacific would have done in the 1870s?
Yes, Amtrack runs over Donner Pass.

I don't know.
Try google tourist train ride between a couple of cities that are on the route.

From Salt Lake City to Sacramento CA - tied into the Amtrack Country wide.

Thanks! Something else for the bucket list.
If you want a good read, get Steven Ambrose: "Nothing Like It in the World" and learn about the transcontinental railroad. I read my copy twice before giving it to a friend who also likes Ambrose.
You can take an Amtrak ride over the Sierra Nevada mountains, but the route has changed (1997) from the original one used by the Central Pacific. Near the top of mountains, the old covered snow sheds and tunnels are no longer used; you are able to walk through them. Still, the new route is a beautiful one. So, enjoy.
For me at least, an even more scenic part of the same Chicago-Oakland Amtrak (California Zephyr) route is from Denver to Ogden. Not on the historic transcontinental line, but well worth the trip. (You can do some parts of it, but not all, by car, and Glenwood Canyon, now that they've rammed I-80 through it, is greatly diminished, but still a great train ride.)

Yes, it is possible. I took the Amtrak from Reno to Sacramento and back a couple years ago. Very enjoyable trip.
