Lens convertor question Fotodiox or?

I recently bought a used Sony alpha Nex7 at a pretty good price. I got the kit 16-55mm lens. Though I have Nikons 7100 and 5300 with a good collection of lenses, I am finding day by day that my wrist arthritis continues to worst. So I wanted to try out a lighter weight camera, hence the Nex 7. Photos have been great so far.
Question, I did purchase a Fotodiox lPro lens adaptor, Nik G to NEX. I am confused on how to use it and set it up.
The connector does have a ring that I turn that changes the diaphragm from wide open to very small. I set my camera to shoot M or A, and then adjust the EV by changing the ISO or shutter speed, coorect?
But where I am confused is how the aperture opening on the lens is controlled? it is automatically set at the wdies (lowest f stop)?

I tried using my 50mm d 1.8 lens where I can change the f stop and select the widest opening on the convertor, and it works great.
So I can control the f stop on non-g lense, but what sets on a G lens.
Hope I am making sense.
What other adaptors would you suggest?

That ring controls the aperture of a G lens. It cannot tell you the actual f/stop, of course. You do zero the meter by adjusting the aperture, ISO, or shutter speed.

i have the fotodiox adapter to use pentax lenses on nikon body , there is no diaphragm connection to boby , so you set the lens manually to the f stop you want , like using a T mount lens .if you set the lens at f16 , the viewfinder is dark .

You can buy a Vello or Commlite adapter that will maintain all automatic functions of a Nikon lens on a Sony, but that is probably overkill for a NEX 7
