Just learned that Canon cameras can use "picture styles" in RAW, but only with Canon's raw converter, and LR won't show them....

Yes. In-camera settings on Canon cameras are reflected in the raw data if you use Canon’s DPP (Digital Photo Professional) SW.

A RAW file, by definition, will not show the results of applying any built in picture styles. My Fuji X-T20 has a comprehensive menu of film emulation styles.

Yes, but you must use Canon's DPP software.

I don't know much about this kind of stuff but the on the Canon Tiff files the information is attached as a side-car(or what ever it's called) and read by the DPP. So the imfo may not be IN the file itself but the extra data is attached to it.
Also if you use one of the Canon larger format printers, I use an(older now) iPF-5000, the printer will print those raw files with no further conversions to jpeg needed and read the Canon Tiff and the picture styles attached to it and print that as recorded by the camera.
The printer has the capability to convert the raw and its accompanying data file to it's printable version.

Nikon works similarly. If one uses Nikon software the in camera settings will be reflected in the image processed from the RAW file.

Hi TriX I agree.. Most shoot in JPEG and can add picture styles to their camera settings... Only wish LR had the ability to apply those settings... My Canon 7D tends to saturate the reds and have a dense black range... In LR I have to desaturate and use the shadow slider to get any details in the blacks...

It’s a compromise for me. I like DPP because once I get the in-camera settings optimized, I don’t need to do much in the way of corrections to the raw image, AND DPP has lower noise than converting in ACR/LR, BUT it’s editing and organizing tools (not much) aren’t as good as LR. Recently, I’ve been converting in DPP 4.x and then exporting directly to PS to finish.

Hi TriX After I edit my raws to my liking in LR, I have noticed that sending that edit into photoshop, it is darker according to the histogram... ??? Does exporting my edits in LR look the same as in photoshop after I export using JPEG? Getting prints from my color lab tend to be dark...

Not sure of the cause for that unless you’re using presets in your workflow. I am a NIMBY at PS, so maybe some more experienced users can comment. Regarding your dark prints, are you calibrating your monitor, downloading the ICC profile from your lab and soft proofing?

Canon's DPP program applies all the in-camera settings automatically to raw images as a starting point. When opened in DPP, raw images will look exactly like jpeg images SOOC. LR don't display any of the in-camera settings.

As others have said, check out Canon DPP and check your profiles. They may help.
