I like the Bryan Peterson series of books... "Understanding Exposure" comes to mind.
A non-technical title I just bought and really love is-
Photography and the Art of Seeing..The 4th edition By Freeman Patterson
With Chapters like- Learning to Imagine and headings like- How a camera sees space, as well as- Working with visual design. I found this to be an excellent resource of thought provoking ideas and inspiring writing.
It goes beyond the A B C's of photography.The book also has exercises you can do for yourself. Highly recommended.
For post processing I like Stephen Laskevitch for Photoshop and Lightroom work flow.
The book is titled Photoshop CS5 and Lightroom 3 - A Photographer's Handbook
Also check for a camera club in your area.

understanding exposure is a must have. also bryan's learning to see creatively. National geographic has a nice series of intro to photogrtaphy books that are excellant. best bet go into barnes and noble or books a million look through their photography book section see what apeals to you.

One book I do really like, if you like portraits, is the book "Luminous Portrait" by Elizabeth Messina

Be careful on the Elizabeth Messina book. This is not an instruction book in the 'How to' writing style. This is more of a coffee table book, you can relax and review the photographs. Some of her pictures are beautiful, some arty, others 'What the?' She'll give basic information: camera settings such as speed 400, f2.4, daylight. That's about it. Oh! And she shoots only film, but no processing information. Not really for digital shooters unless you like to look at portraits.
The other writers are new to me, except Scott Kelby who produces great stuff on Photoshop.
Scott Kelby's The Digital Photography Book, vol 1-4. There are lots of customer reviews on Amazon.

I consider composition to be one of the most important elements in photography. An easy way to learn good composition is to look at photos taken by pros. See how they framed their images. When you're walking around outside, be on the lookout for good shots and how to frame them.
I strongly agree on the Scott Kelby series.
