I am shedding my Canon cameras and gear, going with my X-T20. I do have a couple of EF lenses I would like to keep, specifically my EF 100mm 1:2.8 macro. What is a good adapter for this? Understood that all operations will manual. Thanks in advance for any suggestions.

Any one that works is probably a good one. I have bought several adapters on Amazon, including my EF to EF-M and have had no problems. Just don't buy the absolute cheapest.

You might go look at what frequent UHH contibutor, Kuzano, has written and even inquire of him. He seems to have quite a bit of experience with adapters for MILC's, especially Fujifilm X-cameras.

Check YouTubes for Tony Northrup’s channel. He has an in-depth review of adapters and smart adapters.

Thank you. He, and others on YouTube, had a lot of good comments.

Here’s a pretty good listing of what’s available. Enter camera fitting and lens fitting, and see your choices. Personally, I have been pleased with Fotodiox adapters.

Fotodiox, Fotasy K & F concept. All good quality adapters. Don't spend a fortune. Good luck.

AFAIK, there is no adapter that will allow you to set the aperture of a Canon EF/EF-S lens on a Fuji MILC camera. Manual focus is no problem, as you've noted. But not being able to set the aperture is a huge problem. If your lens is the IS model, that won't work either. None of the EF to X-mount adapters I've seen have any electronic contacts, such as are needed for AF, aperture control and IS function. Not that the camera and lens electronics would be at all compatible, anyway.

Sorry, but your best bet would probably be to sell the Canon lens and replace it with something compatible with the camera. That's too bad, since the Canon 100mm macro lenses are the only ones around that focal length which can optionally be fitted with a tripod mounting ring... a really nice feature!

AFAIK, Canon EF/EF-S lens functions ARE supported by the EF/EF-S to EF-M adapters, as well as the EF/EF-S to Sony E-mount.
