I really don't understand why people put false crap out there like bweber did. It is patently false. Maybe used to work for the NYT.

The upgrade you refer to is for the 27 inch. That is easy. I have done it myself. The picture of the opening of the Mac where you insert the new memory is from the 27 inch. The 21.5 does not have that opening. You have to take the 21.5 Mac apart to add memory.

I am just against this move to make everything run on batteries that eventually fail/degrade when a plugged connection is all that I will every need. At least there should be the option.

You do have the option. I still have my old USB keyboard and track pad that I can plug in and use but why would I want to? I assume your internet access is usbed into a modem and not Wifi, right?
