I know cameras let you set the photo ratio for formatting purposes but I would like to be able to see specific outlines in the viewfinder to compose the photo in the actual printing format. Are there any cameras in the market that do that?

Yes.
Most cameras allow you to set the format size. That isn't the printing size as an 8 x 10 can also be printed as a 4 x 5 or a 15 x 20. That will be the ratio of the height to width.
Most Nikons will. A D800 will let you choose between 3x2 and 5x4.
Will the D800 show the outline in the viewfinder? I was fooling around with one of my cameras last night. You could see the difference in live view, but not in the viewfinder.
