RRS BH-55. Heavy but will handle anything I put on it. The BH-40 will suffice as well. These heads are also offered with great quick releases.

All Pro level tripod heads today offer a quick release system.
The first question you need to answer is WHAT KIND of head do you need?
Tilt, ball, pan, 3 way, geared, pistol grip, video, gimbal, celestial? Lots of choices. Most heads offer a proprietary quick release that will not work on other brands. Arca-Swiss type quick release plates are nearly universal as most major head manufacturers make one or more models that accept them.

If you are looking for a widely accepted standard - for a ball head - Arca-Swiss, Really Right Stuff, Markins, Kirk stand out among the better ball heads. For a pan and tilt head, Arca or Linhof - the rest are not all that stable. For a gimbal - Wimberley is the one I see most in the field, but there are many others.

I don't care for cheap heads of any type - they are made cheaply, and at best they will not be all that stable, and in the worst case, they will just fail. I also don't care for proprietary clamping systems - Arca-Swiss is the professional standard - camera plates, L-brackets, pano rails, feet for lens collars - are all arca-swiss compatible.

Not this particular brand/model. (Expecting it to arrive in two days.) I know Manfroto is very well rated.
I currently have a pistol grip, which is annoying to work with because of the torque on the head when the zoom is extended on one of my lenses. I've used tilt/pan heads before - turns out I like them better than a pistol grip. I do like the fact that this Manfroto can shorten the adjustment arms for traveling.

Good luck. Its an all plastic head offering low stability. Its also a 3 way head so adjustments are very slow since you can only adjust one axis at a time. And its a proprietary quick release plate so you are stuck with that system alone.
But if it suits YOUR purpose then you are all set.

As far as release plate, I will only go for Arca-Swiss compatibles. No need to reinvent the wheel or add to the junk drawer.
