Making my 1st trip to NYC first week of December. Carry on only. Want to take a onel lens on my 750. Dont want to haul a heavy zoom. Thinking of my 20mm F2.8, 50mm F1.8 or 85 F1.8. I have the 28-300 3.5+, 24-70 F2.8, 70-200 f2.8 but too bulky for this trip. Would 20mm be a practical choice for the City.

Full frame, the 50 will be fine. In my opinion, having shot 35mm film in the city for many years, a 35 would be ideal. A 20 might be a little wide as you may be pointing your camera at extreme angles. A lot to see above eye level.

Take the 50. Used to be the standard (normal) lens on 35MM film cameras for a reason. Same angle of view as the eye.

Any focal length would be a practical choice for the city, I guess you just have to pick your "pick" by weight!

I agree with Bill de and boberic, the 50mm.

I live on Long Island. I would take the 28-300. I have the D750, and that was the only lens I took to Cuba. It has the full range with many options for shooting. NYC will be very crowded, the streets are sometimes very difficult to navigate due to the crowds. Having a 28-300 gives you many options for shooting in the city.
Tripods are not allowed in NYC, but the 750 should easily handle most situations.

I'd bring the 50mm. It's wide, but not too wide. Although, it would be hard for me to leave my 28-300mm at home. Try shooting with both lenses in a town or city and see how they feel. The 28-300mm has a good spread.

If the 70-200 is not an option then I'd say go with the 24-70.
