Back side out is the way I have always seen them rolled. Don't know for sure but I suspect that there is a danger that the emulsion/ink might stick to the tube.
Backside out with a piece of tissue paper on the image side. The emulsion is less likely to crack this way. But with digital prints it probably doesn't matter.

Sorry, the picture side out. That's the way the labs send them to me, and They use something else now-days other than a gelatin emulsion. Back in the day when we were using gelatin coated paper, if you didn't soak them in a special solution they would curl up and if you tried to straighten them, the emulsion would crack.
