Is there likely to be a firmware update to improve the quality of the photos at low ISO or is that an issue that can't be solved? Have seen YouTube reviews comparing Canon 6D mk2 to Nikon D750 at 100 ISO and Nikon seems to have far less noise every time.

It is the dynamic range, not the noise levels that the reviewers were complaining about, and only at very low ISOs. Otherwise it is OK and very good at high ISOs.
My local camera store has sold a few and they say the owners like them a lot.
I have been haunting them because I am considering trading my 6D for either the 6DII (I already have $1400 store credit from some lenses I traded.) or save a few months and get the 5DIV. Maybe even trade in my 7DII and if I miss the extra "reach" all that much I can pick up a refurbished 80D to replace it. (90-95% of the way I use the 7DII the 80D will handle, and with the newer sensor) or alternately get another 600mm to replace the one I sold to someone.

Whatever it is, it creates a lower quality picture than the less expensive 6D or Nikon D750. My question was, can Canon correct/improve this backward step with firmware? Apart from the physical improvements on the 6D mk2 surely we are looking for improvements in the final product, not a lower quality costing more money. I was hoping that it could be rectified by Canon.

That's a hard choice. The 5D4 has 2 full stops better DR than the 6D2 up to about ISO 1300, after which it and the 6D2 are essentially equal. The 7D2 is very similar to the the 6D2 up to about ISO 500, after which, it's about 3/4 stop lower than either the rest of the way up. If you shoot a lot below ISO 1000, the 5D4 is a big improvement in DR over either. I want one!

If it is possible for firmware to improve the 6DII then Canon will do it. They added f/8 AF to the 5DIII via firmware.
But when? Nothing on Canon Watch or Canon Rumors about anything like that.

Dynamic range and noise are sensor limitations and not alterable by firmware updates. I'm guessing you did not read all the reviews that discussed this sensor's limitations prior to purchasing the camera. At low ISO the Nikon is far better at retrieving shadow detail than the 6D2 as a result of it's wider dynamic range. At higher ISO, the differences are more subtle.

Luckily did not purchase Canon 6d mk 2. I like the new features but not happy to pay all that extra money for inferior pictures. Now have to decide which full frame to go for,
