Very nice captures. The black and white treatment on the roadwork image lends a timeless quality.
The way you processed the b&w makes it look like it's from a newspaper - interesting effect!

I may be wrong but I don't believe Amish people care to be photographed.

I like the farm shot. They have the best looking horses. Some of the stores around me have shelters for the horses so people can shop and the horses are out of the weather.
The black and white does look nicer than the color version IMHO.

You might want to do a little research about how Amish 'outside the tourist areas' feel. For the most part they are against posing for pictures as it is a sign of vanity. Being photographed itself is not the issue. As far as what gives the photographer the right, in the United States that would be the Supreme Court.
