I checked with Nikon and putting the D850 in crop mode will yield just a hair under 20MP. This would put it more in line with the D500 except for frames per second which with the vertical grip is only 1 FPS less on the D850.

DX mode basically just uses the DX area of the sensor and masks off the rest of the frame. In the past, this would increase the frame rate by 1 FPS. So, if you didn't need the entire area (i.e. you were going to crop anyway), then it was worth switching to get the extra frame rate. However, the D850 doesn't see an increase in frame rate when you switch to DX, so one of the major advantages has disappeared (the mirror isn't rated to flip faster than 9FPS is my understanding). However, you will still have smaller files sizes, so shooting in DX gives you a much larger buffer and allows you to keep more images on your card. However, I wouldn't do it unless you were going to crop anyway. I plan on shooting my D850 at full frame most of the time.
