I suspect part of the problem with the D7000 is that many new users are coming from point and shoot cameras which have much wider depth of field at lower f-stops. The don't realize the importance of focus with a DSLR and don't learn how to properly set up and focus for different situations. Generally it is a case of way overestimating the DOF.
Seems like the D800 may have an actual issue. A ten percent defect rate is far too high for any consumer product. I wonder if the criteria the poster is using are (perhaps much) more restrictive than Nikon uses?
