I do it myself, I go to tripadvisor.com and then to Things to do, I then type in the city, in your case, Salt Lake City, tripadvisor will then list the top ten places to see at that local. I use this to narrow my search for photo ops. Works for me. That way, I am not wasting other peoples time and I can make MY OWN DECISIONS on what to photograph.
Unless you are visiting family, or want to see the Mormon Tabernacle, I would miss every big city and focus on National Parks and Monuments. Badlands, Devils Tower, Yellowstone, Grand Escalante, Arches, Canyonlands, Page Canyons, Horseshoe Canyon, there are so many I can't list them. I took a 7 week and 10,000 mile trip in 2009. All by myself in a motor home and did over 25 NPs and more N Monuments. Stayed out of cities, and off interstates. Wore myself out and I am glad I did because I never got the chance to go back. Now my wife and I go on river cruises, and have one in Europe this fall and China next May. But none will compare to the American West. As the saying goes, "somebody had to do it, and I am glad it was me"

I love your plan and would like to help with some potential side trips, especially in Wyoming. I was born and raised there. Third generation on the same ranch. Was a scoutmaster there for over 15 years and know the state very well. From Cheyenne to Casper there is not a lot to see, but a 5 minute drive through Chugwater instead of around it might interest you. Also at Douglas you can take a short drive up to Ayres Natural Bridge State Park. This is not far from where I grew up. From here to Jackson Hole there are sooooo many options. If you would like email me at grissler@hvc.rr.com. We can chat whatever. I also always recommend people take a virtual tour with Google Earth to see what site they don't want to miss. A few to think about in Wyoming alone; the red wall, which has a "hole" in it, thus the "Hole in the Wall" and the outlaw gang. Side note, I own the player piano the the bar they hung out in. Others; Independence Rock, Devil's Gate and Martin's Cove. These are all together and include a visitors center. If you go that route you don't have to go back through Casper. If you head up to Lander from there which will lead you to Jackson there are too many sites to name, ghost towns, gold nine, old ranches, etc.

for me that would be 80 west then North to Jackson hole rather thanthe route suggested.

That would take you 150 miles of nothing across southern Wyoming. In fact, my dad used to joke that we put I80 where it is so nobody would stay.

There are more interesting places in Wyoming than I can think of while sipping my 2nd cup. I80 is not one of them once your past Veedawo (s?) going west.

Install snow tires before you leave. Bring warm clothes and waterproof shoes.
In the area you will be driving there is lots to see. I suggest checking online for the towns you will be passing through.
