I know, I worked on a oil refinery just outside of New Orleans for awhile. I have been to a couple of Mardi Gras's, way back when I was younger. It is a crazy town

I have never been to Breaux Bridge, for the crawfish festival, But I will make it someday, It is number one on my bucket list. People in Colorado have no idea what mudbugs are.
Shoot, I have to make my own Boudin and Tasso. I can get Andouille, but it is bland, so I make that also. Every couple of months. it is a trip to costco for pork shoulders and time to fire up the smoker. I miss good cajun food.

You are right about that Tommy, GOOD cajun food is hard to beat. My sister-in-law is from Breaux Bridge.
They are much smaller but people in Arkansas use mudbugs for fish bait.
Let me know if you are ever in this area, we could meet up like fellow hogger Dave Chin and I did last year.
A heads up, next year's French Quarter Fest is April 12 - 15, 2018. Might want to shoot for those dates.
