I am headed to Europe this summer. I can only bring one lens and one body. I will bring my 28-300 lens to cover as broad a range as I can but I am struggling as to whether to bring my D610 (FX) or D500 (DX). That is, will I be happier preserving the wider angle (28mm) and use the full frame or, enhancing the telephoto end by using the crop factor body? I don't think any of the bells and whistles offered by the new D500 impact the decision for tourist photography. What would you choose?
You can always crop in post processing. I'd take the D600 and shoot full frame.

Since the D500 is newer, I would bring that. Yes, wide angle will be useful, but no matter which one you decide to bring, at some point, you'll wish you had the other. In the end, it really won't matter. Enjoy your trip, and take some nice pictures.
Unless you will be creating panoramas, I would take the 610 and something wider than 28mm. That simply won't do it. Why only one lens? Pick up a 20mm AFS D f1.8. They are small and you won't notice the weight. Interiors and tight spaces require more angle of view.
My eyes are wide angle, so I would want something wider than 28mm--and rarely use 300mm (especially with crop sensor). Think of all those castles and cathedrals, narrow streets, and crowded markets--wide angle stuff.
If this lens is the only lens you take on the trip I would bring the D610 with it. And I agree with those who recommend you bring a wider lens with you. In most cities you will wish for something wider than 28 mm on a full frame camera.

When I went to Europe a few years ago, I took only my Fuji X-E1 (APS-C) and the 18-55 (27-82 FF eq)
Never needed anything longer but would have loved to have something wider with me.
I wound up shooting several images that I stitched for wider view.
I have a 14mm now and plan on bringing that along with the 18-55 next year when we go back.

Appreciate everyone's thoughts. It is curious, I spend so much of my life at the other end of the spectrum (telephoto) photographically that I have never thought I was missing much on the wide end of life. All of the recs to go wide (and wider!) make me think I need to live a little bit more...photographically at least!
I think of the long lenses as filling the frame with a thing (the subject), while short lenses fill the frame with composition (arrangement)--but this is only a broad generalization. Postcards are typically wide to normal. Some see short lenses as equivalent to backing up (in a way) and long lenses as equivalent to getting closer, and this too is partially true. Many people used to shoot with one normal lens (such as a nice Rolleiflex would have, or a press camera with slightly wide normal lens), but this may be becoming a lost art.
Not sure what the best body for Europe is, but from my experience, the best bodies IN Europe are in Italy!!

I have been to Europe three times. Each time I went my Nikon D800 with a 24-85 lens went with me. I seldom wished for a longer lens but could have used wider a few times for the inside of huge churches etc. Take the full frame.

Any body ages 18-30 would be great to take to Europe. Opps, I am so bad, seriously I would take the D500 and not look back. It is that good in low light. But if you want to do a lot of interior and landscape the D610 would give you 28mm at the wide end vs 42mm.

The 28-300 is a good compromise for this trip, especially on a full frame. The old buildings, squares and scenery beg for wide angle views. You probably won't be using the long end that much unless taking river cruises.
