I just ordered the Canon 5d Mark IV and needed fast SD and CF cards. In my search, I came up with this great review/test/comparison.
https://www.cameramemoryspeed.com/canon-5d-mark-iv/sd-cf-card-speed-test/I was going to order the Lexar Professional 2000x UHS-II because it is much faster downloading pictures to the computer. But given that it is almost 3 times as expensive as the slightly faster (for taking pictures) SanDisk Extreme Pro UHS-I, I ordered the latter.
I also ordered the Lexar Professional 1066x 128GB CF Card.
I use those cards in my 5D MK IV. Lexar 1066x (128 GB) CF card and the SanDisk Extreme Pro (256 GB) SD card you listed. I can record 4k video on either card with no issues.
Glad to hear that, Harold.

Another part of the equation: What card reader are you using and are you using USB 3 inputs in your computer. You'll be bottle necked with the slowest piece of hardware.
Yes, I have USB 3.0 so that should not be a problem.

You've already ordered the cards.
Why do you feel you need such fast cards? Are you going to shoot a lot of video?
Use the cards that are recommended at the front your manual.
The engineers that design the camera, its processors and its software usually know what the camera needs to function effectively!

I have better luck with Lexar cards.
I always shoot in Ch on my cameras while hand holding.
I need to write images to the card fast.
Lexar seems to always have a two for one offer, I buy when they come up on
B&H or Adrama.

Same two cards I use in my 7D Mark II.
I don't plan to do much video. But I do plan to do macro focus stacking out in the field, taking many shots in quick succession. My thinking is that the faster the card is and the most shots it can take without slowing down, the more stacks I can take.
