Mickey, I had a file organization structure in place that I established in 1998, 15 yrs before I started using Lightroom. You can put your files anywhere you want, unless you are comfortable with the default location in Lightroom, which is usually the last place you imported to.
You have two choices. The first is to create a folder where you want the next import to go then when you start the import process, mouse over the upper right corner to look at your destination and it will show you the previous drive and folder location. If you want to direct the import to the new folder you just created, left click on the previous folder name and you will get a two part list - in Windows, it will show you Desktop, My Pictures, My Videos, and other destinations. Below the line there will be a list of the recent folders that were imported to, with a check to the left of the last one.
If you left click on "Other Destination . . ." you will be brought into Finder (on Mac) or Windows Explorer (on PC). Here you can navigate to the folder you created, select it and press ok.
The second choice, which is what I do, is to not create the folder ahead of time, and just create it on the fly. Using the import procedure above (do not create the folder first). When you get to the Windows Explorer or Finder part, you have the option to create a new folder. Do it then, select it and continue.
The benefit of the first approach is that you can not only create the folder but you can copy all of your files to the folder in Finder or Explorer, then use the import dialog to "Add" the files that you just copied to the catalog, as opposed to "Copy" which first copies the files from a source (memory card, camera, etc) then adds them to the catalog.
