I have used Kelby's book and Evening's book and have my students buy Kelby's. Kelby books tell you how to use a specific tool on a specific subject, which my students are most interested in. I prefer Evening's books for myself, because he goes into more detailed explanations about the various PS procedures. You might want to get both of them.
I like anything by Scott Kelby. He is to the point, easy to understand, and personable. One of the best tutorials can be the one 'you write'. Just jump in and start experimenting and playing. You can't hurt anything, as your original image is saved- and you can always revert. Have fun and happy shooting!
