So much to learn, with so little time. I wish I'd chosen photography when I was a lot younger.
Currently capturing reasonable images with my Canon EOS 1100D, which I love with the 75-300mm lens, but I'm not entirely happy with the colour and resolution, therefore, looking to purchase a Nikon. Is there a big difference?

No. But why would you think changing camera brands would change results?

What have you done / not done to your camera that might impact the resulting images? You might just need some help. Post an original copy of a recent image you're unhappy with and store the original so it can be downloaded. Explain in your post the aspects you're unhappy with. Ask for help in what to change / do to address the issue(s).

Welcome to UHH. Photography is a great hobby and it's never too late to start.
I am a Nikon user so I can't speak to your Canon problem, though you may want to contact Canon to see if they can help you.
As to the differences between Nikon and Canon, both are great cameras. For more discussion on the two brands use the "Search" function at the top of the page.

...nature / nurture controversy again... it's not a question of which one it's a question of how much$$$...in my opinion Nikon has the better bodies and canon has the better lenses...

Well canons are noted for there colour being just a tad more likable than nikons, but there is so much with setting the colour now . That you can have almost any type of hew or intensity of colour you want ,, so that should not be a deal breaker with any camera you buy , what
Are you willing to spend on a refurbished camera , I hope your wise enough to chose a refurbished camera , as that is what most of the

I've no idea - erm ...did I mention I was an amateur? I didn't realise I could set a white balance on the Canon - thank you!

I'm not familiar with that camera so I can't give you much help, but try looking in the menu for White Balance and make sure it's set to AUTO.

By the way, if you click on "Quote Reply" when responding we will be able to see who and what you are responding too.

This looks like a good image to review. But, you need to click the box "store original" or there's nothing we can see about the technical details as the EXIF data is not available.

I'll look for 'white balance' and set to auto. I thought I knew all there was to know about my camera.
