For quick 8x10's and proofing I use the Costco paper.
It's pretty nice and very inexpensive but you never know who's making it that day, or the exact white till you open the box.
For sheets I use Red River, mostly Polar White.(I think that's RR?!)
For rolls, mostly a large variety of Canon paper.

Routine printing I use BJ's paper, always the same, pack to pack, year to year, Bob.

What matters most are three things:

• The availability of a custom ICC profile for YOUR brand and model of printer, and the ink you use. (Most reputable vendors DO profile their papers for a Canon Pro 100 using Canon ink. Check the paper manufacturer's web site before ordering. Download the ICC profile and install it according to the instructions provided.)

• The archival rating of the paper (if you want your prints to last a long time, use acid-free paper intended for archival use. Some people just don't care.)

• The quality of the ink you use (Some third party inks are terrible, some good, some great. OEM inks are reliable, and most often what paper vendors use when profiling their papers.)

Address those issues, and almost any paper is usable and reliable.

Canon is running a great special right now. For the price of a couple of ink cartridges you get a bunch of paper. Check it out! https://shop.usa.canon.com/shop/en/catalog/pixma-pro-100-inks

That includes 100-sheets of 13x19-inch Semi-Gloss paper, and 50-sheets of Luster!

I'm a big fan of Hahnemuhle Baryta FB. Bit expensive but beautiful gloss prints. I also like Moab's Exhibition Luster, and their Entrada Rag for matte prints. Both companies supply very good Canon ICC profiles.

Agreed. Their consistency and quality control is remarkable. Red River runs a close second.
