Their experience (you will want to see samples of their work), their costs and exactly what you will get for those costs (ie how many hours worth of work, how many images, are they electronic, what rights, any post processing,....). A reputable wedding photographer should easily put your mind at ease with all of these. Be wary of hidden add-ons and complicated price structures; there is absolutely no need for confusion.
If you find one that volunteers don't let him come to your wedding with a camera,

Beside the obvious experience and contract (mentioned already) and past work there are two three things to consider.
1 - Ask for a (paid but credit) test photo-shoot so that you can see the real quality. If refused, walk.
2 - Go with your social guts. If you are uncomfortable... Pass
3 - Check the reputation of the guy. If he is experienced as he said he is he is known by folks in the wedding business like officiants, caterers and so forth. Use the average as some folks for one reason or another will go all out to either push him or destroy him.

Go to his/her studio and check out prior weddings. Ask for references. Is he insured? Get everything in writing no verbal "OK I'll do that"

I would suggest getting references, but references would be supplied by the photographer himself, so they would all be good. See examples of his work and nail down exsactly what you want from him. Then put it in writing. Then hope for the best.

Check out their work, check out their ratings, did they do a wedding of anyone you know, will THEY and NOT a stringer do your wedding. Most GOOD wedding photographers have internet ratings, CHECK THEM. Most all of my weddings came from relatives/friends of the bride or groom who saw me in action and saw my photo's.
Get and read a contract with the photographer.
Make sure you do not allow them to use/post any of your photos elsewhere unless you okay it in writing.

The above is sage advise! I would also add to verify that your assigned photographer is the one who actually took the photos of the samples that were shown to you.
Your wedding is one of the most important days in your life. If you are not happy with the photos you cannot go back and take them again.
Make sure you know what is included in your wedding package, how many hours the photographer will spend, will he attend the reception, etc.
Make sure you meet the photographer who will be at your wedding. Some studios send any available photographer. Meet the one who will be at your wedding. He should be calm, organized, personable, helpful, and, most important, dependable.
Make sure your photographer will dress for the occasion and blend in with the wedding party. Formal wear is usually required. Nothing looks worse to your guests than a sloppy or poorly dressed photographer in front of the wedding party.
Make sure the photographer cannot cancel the contract. Some do if a more lucrative assignment comes along.
Know in advance what the photographer will charge for reprints and enlargements ordered after the wedding.
INSIST ON A MONEY BACK GUARANTEE. If you are dissatisfied and refuse the photos, your entire deposit should be refunded.
Some wedding photographers have a 3 plan deal. Super Deluxe, Deluxe, and Regular. Each priced differently. People who get married sometimes are on a budget too. A professional wedding photographer is the way to do it. Rather than let amateurs like myself do it. I did it once. Never again. The photos I took were decent, and I did it as a wedding gift for a friend. Better to buy the gift.

Actually, much more important than the phone, is the carrier. If you have the same carrier, you get free air time when you talk to her!
And if she's REALLY good looking...., you might talk to her a lot!!!

If they are not using good FF cameras and top of the line lenses, move on.
