I've just made the transition to Windows 10 and it all seems to behaving itself at the moment.
However, one thing is annoying. I'm sure there will be more but this one is relevant here.
When I click on the link in my mail client to see the UHH site it opens in Edge. I prefer to use Chrome as my default browser. I have changed all the file types that have Edge associated with them, but I can't see how to do that with the UHH pages.
When I look at the UHH URL it doesn't seem to have a type.
How can I sort this out?

You don't need to do that. Just make Chrome your default browser. A message asking if you want to do that should have popped up when you went into Chrome the first time. If you missed it, try this.

There is one exception. If you use Cortana, the new search box to the right of Start, It will only search with Edge/Bing.

I HAD set the default to chrome but when I just looked it wasn't set, so I've done it again. Let's hope that sorts out the problem once and for all.

I don't really use Cortana so I don't know this for certain, but I assume it's MS's way of forcing us to use Edge. I'm going to check this out. In any case, the OP needs to make Chrome his default.

You may have inadvertently done something to reset it. I set mine to Chrome months ago and it has stayed as the default.

I had mine set too. Then two weeks ago, I discovered that only Bing/Edge would default while using Cortana. I tried everything to change the default. I then searched the internet and found the following article:http://www.thurrott.com/windows/windows-10/66840/microsoft-blocks-third-party-cortana-hacks. That change, as the article points out, occurred in the Cloud, not update.

I have been happy using Thunderbird as my mail client. But it would probably require changing your work process. http://www.mozilla.org/en-US/thunderbird/

I am using Thunderbird. So it's the 'default' that's been causing the trouble.

Trying to help here. I don't understand how Thunderbird can open in a browser. It is standalone software.

I believe there are two different issues being discussed in this thread. One is hyperlinks in email defaulting to Chrome and the other is the new Win 10 search box, named "Cortana". My posts have been about Cortana not being able to default to Google search. Microsoft redirects all Cortana searches (the redirect exists in the Cloud) to Edge/Bing. Prior to two weeks ago, one could change the default to any search engine. No longer.

Selecting a browser in Settings>Apps>Browser to one's choice will allow hyperlinks in email to redirect via a browser of one's choosing. ie Chrome, Yahoo, ... That is a separate issue from Cortana search. At least this is my understanding and experience.

Your comments made me re-read the original post. I had misunderstood the problem. I think I now understand that norman is clicking on a link in an UHH notification email (in Thunderbird) and it opens the link in Edge. Other than checking the default browser setting, I can suggest following this advice: http://kb.mozillazine.org/Changing_the_web_browser_invoked_by_Thunderbird

I run Windows 10, and the Thunderbird links open just fine in Chrome...but I do not remember consciously changing settings. I upgraded from Win7, so it probably migrated the old settings.

Yes, I believe you are correct. I also run Win 10 - Google Chrome. My email links open perfectly too. The first default in Settings>Default apps is Email. I believe that controls the hyperlinks in email - not totally sure, but I suspect so. So, if Norman changes that to Chrome, he may find that resolves the issue.

I've now worked my way through everything I can find that talks about setting any kind of default. I hope that should sort it out.
Now I'm trying to find just how many programs the upgrade to W10 has removed quietly.
So far I found ccleaner and my AV software (Webroot). When I found M$ Security Essentials running that got me checking things out. And windows.old didn't have them in it either. This could take some time!

I updated to Win 10 Pro from Win 7 Pro in early August, 2015. I've had no issues with software. I did find the following reference helpful. I thought I'd share it with you. http://windows.microsoft.com/en-us/windows-10/support
