Go onto Gimp homepage look under tutorials and 'converting images to B & W lots of info there on converting using several methods. Also some tips on the use of sRGB versus printing in RGB and why 'What you see Isn't what you get'.
It is quite an interesting site to explore and no matter which PP programme you use there will be info that will add to your knowlege.
probably a better answer than get your monitor calibrated!

Need to find a printer that will print bw as it should look.
Or find someone who uses only shades of grey inks intheirprintet
It took years for epson togeton board with printers that would do a good job and most commercial one hour places where awful with strange color cast. From green topink

Seriously, I'm not trying to be cocky here, but that is why I don't shoot film at the moment. I currently don't have a place to set up my darkroom and I have never been satisfied with local print shops. I hope to get back to film soon but for now it is good for me to learn digital. IMO using local print shops for film is like leaving a digital camera in auto mode and not pushing the PP past whatever the camera does. I hope you get it worked out.

Answers to these must be YES to achieve predictable results:
Is your monitor calibrated and profiled using a colorimeter and software from XRITE or ColorVision or equivalent?
Are you using the lab's printer profiles as soft proofing profiles?
Are you ordering prints made on an art paper using a high end Epson or Canon inkjet photo printer? (Digital B&W silver halide prints are often made on color paper!)
Did they give you their standard test print to verify that what you see on your monitor during soft proofing is what you get on their prints?

What is the RGB value of the "black" you see on your monitor?
