We are planning a trip to the east coast of Australia for the month of May- we will be staying in Port Douglas, Cairns, Sydney, Melbourne, Cowes, Torquay and Port Campbell. I'm looking for suggestions on good locations to photograph wildlife, landscapes, etc. Also, has anyone stayed at the Jabiru Safari Lodge and, if so, what did you think of it? Is it better to spend extra time in the Daintree Rain Forest and not go to the Jabiru Safari Lodge?

For sea scapes check out the Northern Beaches around dawn.
This group (I am a member of it) has lots of dawn shoots, followed by breakfast at a local cafe. Mostly they meet on weekends
http://focusphotographers.org/For spectacular (by our standards) scenery check out the Blue Mountains National Park. It starts about 1.5 hours from the centre of Sydney (but not in peak hour). Also good for some wildlife down in the Glenbrook area of the park.
Sydney Harbour can be a great spot for water/city scapes.
How are you getting around locally? Will you have a car?
Up in Cairns try to get out to the reef (day trip). We have only visited Cairns once, however we have been to the reef (different locations a few times).
Personally I would head out to the Safari Lodge. We did a day trip (tour) up to the the Diantree out of Cairns and we thought that was enough. It all depends what your interest are.
With your permission I can post some images of the Sydney/Blue Mountains region, along with the locations.

#1 for West Head looking north over Broken Bay/Brisbane water. This is the northen boundary, of Sydney, and in Ku-ring-gai Chase National Park

#7 If you can, try to catch a ferry - they can be a very scenic way to get around. Lots of leaving for seperate destinations from Circular Quay - and not just up the harbour.

#8 The southern border of Sydney is another national park "Royal National Park" - Another great place for coastal shoots, however I haven't shot there.
This is Between Bundeena and Mainbar and reacable by ferry from Cronulla, and a relatively short walk.
#9 To the west is Blue Mountans National Park. It is very large and ajoins other wildernes areas. The south side is very acessaible by public transport and can be touristy, mainly Katoomba. You won't see much wildlife, except for birds unless you visit Euroka Clearing at the Glenbrook area of the park.
Lots of day trips from Sydney are available.

A bit further afield (about 2 hours by rail) and super spectacular is Bombo (near Kiama)
There is a station at Bombo and a shortish walk to the old basalt quarry - A car makes it easier.
These two are from my first dawn shoot there.
The second shot just how big the waves are, notice the photographer.
