Billy, This photo really jumps out at me from all angles. Great details from the roof to as far I can see to the inside. I am curious though, how long do you think the chickens go without refrigeration?

You have hit the nail on the head Dave! The birds were probably slaughtered and dressed the day before and kept chilled. Delivered very early am and sit their for sale in temperatures that hit 34 C. If you enjoy spending time in the smallest room in the house buy your meat from places like this. It is considerably cheaper than the supermarket but needless to say Mrs Billy does not avail of such places. Its like street cooked food here. Romantic and tasty etc etc but you have no idea how old it is how its cooked and the vendor has no licence and no training in food hygiene. All I say is look and avoid. Locals develop stomachs very different to yours and mine. They drink water straight from wells which looks perfectly clear but would lay you up for two or three days.
