Tacos de Carnitas with a KICK!

We have more good taquerias in the DFW area than burger joints (if you eliminate the fast food mega-chains) In my work neighborhood in old east Dallas we have 2 or 3 in every commercial block.... sometimes more. I tried this one out for lunch. The Carnitas were above average & there were fresh Serrano peppers in the pico de gallo but the thing that put this one on the map was the orange stuff in those little containers..... Pureed Habanero peppers, vinegar and other spices. A few Shazam's - Holey Mole's - Great Jumping Catfish & other unprintable expletives after the first few bites found me grabbing my diet Dr. Pepper post haste... Don't get me wrong... not too hot but GOOD hot... It's just that my poor burned out taste buds were not expecting it! I'll be back for that orange gold for sure!!

I keep zip lock bags of habaneros in the freezer.
two years of ageing brings out the earthy flavor, keeps the heat and gets rid of the bite.
Especially good if cooked with whatever dish is being prepared.

Cool! (literally!!) I grew 2 or 3 plants in a raised bed a few years back and they grew at an amazing rate.... We got so many peppers we wound up making a couple of gallons of concentrated vinegar - pepper hot sauce and surprised a lot of friends at Christmas with it.....

get some ghost peppers, your friends will cuse you out, thats the hottest pepper around

Kinda like that old song.... I don't want em, you can have em, they're too hot for me!!! :) Seriously, I like spicy but I think they grow those things in Dante's Inferno!
