Do I detect a hint of HDR?

Fun series! I like your processing; works well with these.

On #2 I'd be tempted to crop out the banner and lady behind table on left. The bowler (?) hatted gents, all with the red scarves - their engaging body language...that is definitely worth zooming in on :)

What! Cut out the Devon Cider?

The bowler hatted gents are the fine local gentleman from the song complete with the grey mare - although she's still alive at this point!

Good suggestions though!

No HDR - purely basic processing in Lightroom.

There be the constant question that everyone needs to answer for themselves - what should be left and what shouldn't?

Should all modern items and people be removed, leaving a fake image of the past? Then perhaps converted to sepia or 'hand tinted' effects?

Or should only extrenuous elbows and bags be removed to leave a flavour of the festival as it is today?

Personally I prefer the originals as it captures the atmosphere of the event very nicely. It's very hard to eliminate signs of modern life unless it is a tightly controlled theatrical scenario.

To me things like the modern back pack become more noticeable in the sepia one because they are out of place with the sense of the sepia image.

Remember that publicity shot for Downton Abbey with the plastic water bottle on the mantlepiece?

Devon villages have so much photographic potential as they are, without too much post-processing.

Nicely done.
