You as well as most of use do have tendency to over process. It's hard to fight the urge, " Yes that looks good " then a little more will look better. LOL
Another is over "Clarity". Finding the sweet spot is part of the challenge. Welcome to the Challenge. It might help if you Zoom in on an area and adjust from there.

I can tell you the way I do it, how others do it is there choice. I generally take to where I like it, then back off a few.
Very often when you make one change it will effect the whole photo. I like to zoom in and take a close look at what I think is finished photo. My eye sight isn't near what it used to be.
You are right in asking, and MMC gave you a straight answer. Now go back in Light Rm, Zoom in a lower it and see the difference. Thats about the only advice I can give you with out looking over your shoulder. And by the way, Keep it up. It will come together for you shortly. Your 95 percent of the way there.
And will add working alone doesn't make any easier.
I think it would be a fair guess to say that you like a generous amount of vividness in your edits. Well, there's more than one way to skin a cat, as they say. Apart from saturation, you can also use contrast, clarity and sharpness to impart vividness. If you optimise those last three you would probably find that you could back off with the saturation and you'd end up with an equally vivid edit that had a less unnatural look to it.
EDIT - I've just noticed your comment about vibrance and saturation. Same difference - use less and it'll look less unnatural.

The best cure for it is to walk away from it for a while - hours or days, and come back and ratchet down the controls. As long as you're looking at it, you will keep bumping it up a little more, a little more till it is about to catch itself on fire.
