Why do camera companies announce the release of a new camera or lens & then can't supply them for months after? Like the Nikon P900 or the 200-500mm lens.

Demand out paces supply?????
It probably doesn't make good business sense to manufacture large quantities of an item before it's established that large numbers want to buy it.

They made a mistake estimating the sales. The product sells better than they expected. No company wants that to happen but it happened.

No manufacturer, whether it's automobiles or iPhones, produces an entire production run before selling the first unit. Unsold products cost money.
