I wonder which style is preferred by most viewers?

They are honestly both beautiful. The first one I love the most, simply because of the movement in the picture. Having in mind that it's in air collecting it's nectar the picture has more realistic dynamics in it. I would go for the crisp sharp solution maybe if I would like to make a portrait of the hummer.
I have commented my thought on this, simply to test myself. I am no expert :)

A friend is shooting hummers with a 7d Mk2 using a very fast shutter and Auto ISO. It freezes the wings of the bird and the images look quite clean, even with the very high ISO.
Great captures. I prefer sharp detail in the wings to blurred wings. However, that's much harder to achieve.

Very nice, Jack. I personally prefer stop-action on the wings. That's the only time one can study what they really look like.
