Mostly because professionals can see the difference between a camera processed photo and improvements they can achieve themselves manually. It's not because they "have to" but because they recognize the shortcomings of all cameras, whether film or digital, and want to fix those shortcomings to improve their art. Even Ansel Adams was a master post processing artist in a darkroom and didn't expect the camera to capture what he saw in person. "Good enough" is good enough for some people and not for others. Those who excel in any field of artistic pursuit do so with lots of practice and taking total control of whatever they're doing artistically.

In addition, RAW images by their very nature of having all the information (metadata) necessary for post processing are just flat. Plain and simple, just flat. RAW is your digital negative and as such requires processing just like film did in the days of film.
