Some places in the northeast horses are still used to help collect the sap from the sugar bush. Here is fine team of horses in front of a sugar house. The maple harvest (like the ski season) was cut short this spring due to the abnormally high temperatures and lack of snow cover. Sugaring ends when the trees start to flower.

Sap can still flow, but when budding starts the sap becomes bitter and of poor quality. Rbo36
